
Main ingredients
2 ripe avocados, mashed
2 tablespoons oil
1 tablespoon lemon juice
1 small onion, diced
1/2 teaspoon salt
4 hard-boiled eggs (optional)
Prepare the Salad
Combine all ingredients and blend until smooth.
Chill at least one hour or until ready to serve.
Note:
Excellent as dip or spread; or served with fresh vegetables.
