1 onion, minced
2 tablespoons oil
3 carrots, coarsely grated
2 stalks celery, diced
1 parsley root, diced
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon paprika
1 cup navy pea beans
3 quarts water
2 meat bones or chicken bones (optional
Prepare the Soup
In six quart pot, sauté onions in oil until transparent.
Add vegetables and sauté for 15 minutes.
Add remaining ingredients, cook for two hours over medium-low heat.

Freezes very well.
