Passover Ketchup

(The Nosher via JTA) -- Passover is a time our community focuses a lot on food – family traditions, the seder dinner and which products are and are not kosher for Passover. But this holiday can also be a time to make healthier choices and ditch some of that extra sugar in your diet.

This homemade ketchup is Passover-friendly and sugar-free. It also cooks up in no time, so you might find yourself whipping up batches of this all year long. You can easily double or triple the recipe to make larger quantities.

Ingredients:

  • 1 14-ounce can diced tomatoes
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon sea salt
  • 4 dates, soaked in water, drained and chopped (preferred medjool dates)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste


Directions:
Drain the can of tomatoes.

Add all the ingredients to a small pot and bring to a boil. Cook for a few minutes to combine the flavors. Adjust season to taste.

Move the mixture to food processor or a blender and blend until completely smooth. Allow to cool.

Store in a mason jar or other airtight container.
