Making a good, tasty, creamy mashed potato for a meaty meal can be challenging if you keep kosher, since most decent recipes rely on a good helping of milk.

What's more, I was looking for a mashed potato recipe that actually had a delicious flavor of its own, not the flavorless mush a lot of people make do with.

Then I found this - and it was glorious:

Ingredients:

  • 1-1.5 pounds potatoes - unpeeled
  • 2 cloves minced garlic
  • 1/2 cup of chicken broth
  • 1 tbsp. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Method

  • Cut potatoes into cubes of roughly equal size - do not peel the potatoes!
  • Boil a pot of water and add potatoes
  • Leave to cook 30-40 mins - until they get soft enough to easily pierce with a fork
  • Drain potatoes
  • Heat chicken broth, then add to potatoes together with all other ingredients
  • Mash until smooth and creamy
