
Ingredients:
2 chickens in 8ths
- 2 tblsp zaatar
- 1 tblsp grey poupon mustard
- 4 garlic cloves minced
- one finely chopped red onion
- 1 tblsp. dark extra virgin olive oil
- 3 cups of freshly cooked chickpeas
Method:
Put the chickpeas first, then the chicken, on parchment paper which is over a cookie sheet.
Mix the remaining ingredients and smear over the chicken
Bake at 400 degrees for approx 1 hr 45 minutes. Chicken should look golden brown.

Serve with quinoa and salad
