Ingredients:

2 chickens in 8ths

  • 2 tblsp zaatar
  • 1 tblsp grey poupon mustard
  • 4 garlic cloves minced
  • one finely chopped red onion
  • 1 tblsp. dark extra virgin olive oil
  • 3 cups of freshly cooked chickpeas

Method:

Put the chickpeas first, then the chicken, on parchment paper which is over a cookie sheet.

Mix the remaining ingredients and smear over the chicken

Bake at 400 degrees for approx 1 hr 45 minutes. Chicken should look golden brown.

Serving:

Serve with quinoa and salad
