
Ingredients:
- 1 tbsp oil
- 1 large onion
- 2 cloves garlic, crushed
- 3 stalks celery
- 3 large carrots
- 1 large zuchinni
- 1 can cannellini beans
- 1 large tin chopped tomatoes
- 1 small pot tomato paste (approx 100g)
- 1 tsp dried basil
- 1 tsp dried oregano
- salt, pepper to taste
- 5 cups chicken or vegetable broth
- 1/2 cup orzo (can be replaced with rice, barely, pasta and alter timings accordingly)
Method:
Chop up onion, carrots, celery, zucchini
Heat oil in a large saucepan, add onion, crushed garlic and carrots, celery and zucchini to saute for 10 mins
Then season with salt, pepper, oregano, basil
Add chopped tomato and tomato paste
Simmer for 5 minutes
Add broth, simmer for 1 hour
Add beans, simmer for half hour
Add orzo, simmer for final half hour
Serve with crusty bread, you can add sprinkle of grated parmesan cheese too.
