
Ingredients:
5 peeled potatoes
1 peeled onion
2 eggs
1/3 cup flour
1 tsp salt
Dash of pepper
Oil for frying
Method:
Grate potatoes and onion (can be done in a food processor) and drain
Add eggs, flour, salt, pepper
Mix
Heat oil on high, (test it its boiling by putting a piece of potato in and seeing if it sizzles) and add tablespoon of mixture to fry. Press down on mixture to make sure it's not too thick.
Fry for approximately 5 minutes on one side, when brown flip and fry for another 2 minutes
Take out the pan and put on a plate lined with kitchen paper to absorb some of the oil
This recipe makes about 10 latkes.
