
Ingredients:
1 kg chicken breast, cut into strips
6 tbsp canola oil (for frying)
1 box mushrooms (200g approx) sliced
2 onions, sliced
1 red pepper, sliced
Medium sized green chilli pepper (optional) - deseeded and sliced
2 carrots, peeled and sliced
4 spring onions, chopped small
1 courgette, sliced
2 tbsp soy sauce
2 tbsp sweet chilli
salt, pepper (to taste)
1 tbsp brown sugar
3 tbsp sesame seeds (optional)
Method:
In a large wide saucepan heat 3 tbsp oil and cook the chicken until it has all changed colour
Remove from saucepan and put to one side
In the same saucepan heat remaining oil and saute onions until golden nd then add the rest of the vegetables and cook. They should be slightly crispy and not soft.
Add the cooked chicken to the vegetables, and the rest of the ingredients
Cook for another 4 minutes
Add the sesame, gently mix and enjoy.
