
Ingredients:
Cake:
- 170g margarine
- 170g sugar
- 170g self raising flour
- 2 eggs
- Grated rind of 1 lemon
- 4 tbsp soya milk
- Topping:
- Juice of one lemon
- 85g sugar
Method:
Mix all the cake ingredients in a mixer (the longer you mix the better)
Bake at 160 degrees for 50 minutes
15 minutes after the cake comes out the oven, prick it and pour over topping
