
Ingredients:
1 large onion
2 cloves garlic crushed
Small piece fresh ginger finely sliced
2 teaspoons green curry paste
Chilli powder (optional)
1 can chickpeas
100g cheese
1 tbsp oil
1 tin coconut milk
Method:
Heat oil in saucepan
Slice onions, add garlic and saute until golden
Add curry paste and fry off for a minute
Add any other seasoning (curry powder etc)
Add slice ginger
Drain chickpeas and add to saucepan
Add coconut milk
Simmer for 3 minutes
Serve with freshly steamed white rice
