I sometimes look in my store cupboard and find a random ingredient and I have no idea why I bought it.  This time it was a jar of Italian dressing (I usually make my own) but using this ingredient together with a couple of others and a couple of chickens, and, hey presto…..a very tasty chicken dish!

Ingredients:

Two chickens, portioned (I removed the skin, but you don’t have to)

1 jar Italian dressing

8 cloves of garlic

1 and ½ tbsp mustard powder

1 and ½ tbsp honey

1tsp salt

Method:

Preheat oven to 185 degrees Celsius (365 degrees Fahrenheit).

Place the chicken portions in a casserole dish that has a cover (or just use foil).

Sprinkle salt over the chicken.

Pour the Italian dressing over the chicken.

Peel the garlic cloves and scatter them around the chicken.

Sprinkle mustard powder over the chicken.

Drizzle the honey over the chicken.

Cover the casserole dish and bake for 1 and ½ hours, making sure the chicken is cooked through.
