Sweet Potato and Split Pea Soup

This recipe is so easy to make and the results are so tasty that everyone in the family will be asking for seconds!

Ingredients:

2tbsp olive oil

2 cups onions, diced

1 cup celery, diced

1 cup carrots, diced

3 cups sweet potatoes, diced

4 garlic cloves, chopped

1tsp black pepper

1tsp oregano

1tsp thyme

1tsp paprika

454g yellow split peas

5 cups vegetable stock

5 cups water

1tbsp vegetable bouillon

3 bay leaves

Method:

In a large pot over a low heat, heat the oil.

Add onion, celery, carrot, sweet potatoes, garlic, pepper, oregano, thyme and paprika, stirring to combine.

Cook 5-10 minutes until onions and celery start to soften.

Add the split peas, stock, water, bouillon, bay leaves and bring to a boil.

Reduce heat to low, cover and simmer for one hour.

At this point, you can serve the soup as it is for a chunky soup or puree it for a creamier soup.
