
Ingredients:
• Frozen Puff Pastry
• 1 Onion
• Oil for frying
• 1 Large Sweet Potato
• 1 Box Mushrooms
• 1 Pint of Milk
• 4 Eggs
• Salt & Pepper according to taste
• Grated Cheddar Cheese
Method:
Line a round oven proof dish with puff pastry and bake blind for 15 minutes
Meanwhile, chop an onion into slices and fry in oil until golden brown
Peel and chop sweet potato into cubes and boil up until soft but holding their shape (around 15 minutes)
Remove dish with pastry from the oven and place fried onions inside
Slice mushrooms and fry in oil
Drain sweet potatoes
Add fried mushrooms and boiled sweet potatoes into pastry
Mix milk, eggs, salt and pepper in a glass bowl and pour onto vegetables
Cover the top with grated cheese
Bake at 150 degrees celcius for 40 minutes
