"A land of wheat and barley, grapes and figs, pomegranates and olives and [date] honey," (Deuteronomy 8,8)
Ingredients:
1/2 cup raisins (the grape is one of the seven fruits mentioned in the Torah as growing exceptionally well in Israel)
2 cups oats
1 cup sugar
1.5 cups whole wheat flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinammon
3/4 cup oil (canola is best)
2 eggs
12 coarsely chopped unroasted walnuts
1/2 cup tehina paste
1/2 cup honey
Mix all ingredients together to form dough. It will be sticky, so wet hands before forming pieces into flat round circles, bake for 15-20 minutes at 350 degrees Fahrenheit.
Makes about 35 cookies.
