Israelis will churn out 38 million shekels ($11.4 million) for cheese on the Shavuot holiday Sunday night and Monday. A widespread custom is to eat dairy foods on the holiday, which is celebrated an additional day outside of Israel.
Cheese sales are up eight percent compared with the holiday period last year, according to food industry statistics. Thirty new dairy products have been offered for Shavuot, including new types of cheesecakes and special hard cheeses.
