The largest growth areas for kosher food supervisors are China and India, Star-K Kosher director Steve Sichel told AP Food Technology.com. The Baltimore-based kashrut certification organization employs a full-time rabbi in India as well as others who commute from Australia to China.

Sichel said that the kosher food market is growing 15 percent annually, almost four times the rate of the rest of the food market. He estimated the kosher food market in at $165 billion a year. Muslims and Seventh Day Adventists account for a large share of the market.
