  • 2 cups sugar
  • 1 cup Gefen Corn Syrup
  • 1 cup water
  • 1 (5-ounce) bag Heaven & Earth Veggie Sticks
  • 2 and 1/2 teaspoons baking soda
  • 1 tablespoon Gefen Vanilla
  • 2 tablespoons coconut oil (I use filtered so there is no coconut flavor)

Prepare the Candy Brittle:

Yields 40 pieces

This recipe requires a candy thermometer.

Grease a half sheet pan and set aside.

Add sugar, corn syrup, and water to a heavy-bottom saucepan on medium heat.

When temperature reaches 290 degrees Fahrenheit on a candy thermometer add the bag of veggie sticks, stirring often until the temperature reaches 295 degrees.

Remove from heat and quickly mix in baking soda, vanilla, and coconut oil.

Pour onto the prepared baking sheet and spread to 1/4 inch thick. Let cool completely.

Break into pieces and store in an airtight container.
