Everyone loves crispy chicken, but not everyone loves the frying and less-than-healthy way it's cooked, not to mention the mess of clearing up.

Well here's a recipe that is both a healthy option and so easy to make - with hardly any washing up or mess!


  • 2 chickens in 8, skinned
  • 1 and half tbsp oil
  • 4 eggs, beaten
  • 1 cup flour
  • 1 cup cornflake crumbs
  • 2tbsp corn starch
  • 2tsp garlic powder
  • 1tsp coarse black pepper
  • 2tsp parsley flakes
  • 2tsp sugar
  • 2tsp paprika
  • 1tsp salt


Preheat oven to 170 degrees Celsius (350 degrees Fahrenheit).

In one large bowl, combine the flour, cornflake crumbs, corn starch and spices.

In a second bowl, beat the eggs.

Grease a very large baking pan with the 1 and half tbsp of oil.

Dip each piece of chicken into the beaten eggs and then coat with the crumb mixture.

Place chicken in baking pan.

Spray chicken lightly with spray oil.

Bake covered for 2 hours.

Uncover and bake a further 15 minutes or until crispy.
