Easy tomato soup Malky Soffer

Tomato soup can be one of the easiest dishes to make – taking no more than 45 minutes from start to finish. It can be eaten as a starter or even as a main, depending on which accompaniments you have with it. Either way, it is a very tasty dish!


  • 2tbsp light olive oil
  • One onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 1 stick of celery, finely chopped
  • 1 large potato, cut in to very small cubes
  • 1 heaped tbsp tomato paste
  • 2 x 400g tinned chopped tomatoes
  • 300ml passata
  • 1 level tbsp dried oregano
  • 1tbsp sugar
  • 1tsp salt
  • ½ tsp black pepper
  • Boiling water
  • Suggested Accompaniments:
  • Finely chopped parsley
  • Grated cheese (if part of a milky meal)
  • Fresh crusty rolls, warmed in the oven
  • A handful of cooked Fusilli pasta


Heat the oil in a large saucepan and once the oil is hot, add the onion, garlic and celery and fry until golden.

Add the potato cubes and fry a further 2-3 minutes.

Add the tomato paste and mix thoroughly.

Add the tinned tomatoes and the passata and mix well.

Add the oregano, sugar, salt and pepper and mix well.

Add enough boiling water to fill the saucepan two thirds full.

Bring soup to a boil, then cover and simmer for half an hour.

Liquidise the soup with a hand blender and adjust seasonings if necessary.

Serve with any of the above suggested accompaniments.
