Salmon, as well as being an excellent source of Vitamin B12, Vitamin D and Selenium and many other minerals, is also a very versatile fish and widely available worldwide.
This recipe gives it a mouth wateringly tangy taste and can be served either hot or at room temperature.
(Serves 4 people)
1 cup whole berry cranberry sauce
¼ cup honey
¼ cup soy sauce
2 garlic cloves, minced
1 tablespoon grated fresh ginger
¼ teaspoon black pepper
4 salmon fillets, skinned
Preheat oven to 170 degrees Celsius (350 degrees Fahrenheit)
Mix together all ingredients except for the salmon in a medium bowl.
Lightly grease a baking dish and place salmon in the dish.
Spoon the cranberry mixture over the salmon fillets.
Bake the salmon for 10-15 minutes or until the salmon flakes when tested with a fork.
