gluten free latkes INN: Al Hamishkal

Ingredients:

3 medium sized potatoes

1 carrot

1 small onion

2 tbs. potato starch (gluten free)

1 tbs. tapioca

1/2 tsp. baking soda

2 eggs

salt and pepper to taste

Grate the potatoes, carrot and onion and drain in a strainer for half an hour. Press down with your hand to remove remaining liquid. Add flours, eggs, s.and p. and mix to form an even batter. Cover and leave for 15 minutes. Form latkes and fry. 

If sweet latkes are desired, add 1 tbs. sugar or honey to batter.
