Healthy Honey Cake Al Hamishkal

From "By Weight" ("Al Hamishkal", a play on words also meaning "about [your] weight"), the natural foods store with branches in Geva Binyamin, Givat Shmuel and Karnei Shomron.


(Note: 454 grams + = 16 ounces, but the number of cups depends on the specific weight of the ingredient, so each was converted separately) 

300 grams (2.5 cups) 70% whole-wheat flour

5 tsp. baking powder (the kind without aluminum)

100 grams (1/2 cup) cane sugar

1 tbs. grated lemon or orange rind

80 grams (1/3 cup) natural honey

1/2 c. water

1 organic egg

2 tbs. coconut oil

dash salt

50 grams (1/4-1/2 cup) walnut or pecan chopped

If desired, add ground cloves, cinammon, ginger or hel (a Yemenite spice)

Heat oven to 180C. Mix flour and b. powder, nuts, sugar and dash salt. Add spices if desired. Add liquid, mix until light mixture is formed.

Use lightly greased loaf pan and bake 40 minutes until inserted toothpick comes out clean.
