Cheese Crepes

Learn how to prepare basic cheese crepes, or blintzes, with a sweet cheese filling. The ingredient list is small, and the results are satisfying. For something just a little different, smear filling onto the crepes and roll each one into a thin, long log. You can also stack layers of crepe and filling to form a crepe cake; top with cherry pie filling for a beautiful presentation!

Ingredients:

Crepes

1/2 cup sugar

1 cup flour

1 cup milk

1 teaspoon vanilla sugar

4 eggs

1 teaspoon oil

Filling

1 pound farmer cheese

1/2 cup sugar

1 egg

1 teaspoon vanilla sugar

For the Crepes

1)Mix the ingredients for the crepes very well until smooth. Pour enough batter into a well-greased, seven-inch skillet to cover the bottom of the pan. Fry until the batter bubbles. Turn over the crepe with a large spatula and continue frying for half a minute.

2)Remove crepe from pan and spray oil to grease the pan again. Pour in batter for a new crepe. Continue making crepes until all the batter is used up. (Remember to re-grease the pan before each crepe is poured.)

For the Filling

1)Mix the filling ingredients and place three tablespoons into each crepe.

2)Fold the two sides in and roll up.
