These cookies will melt in your mouth - and even better, they cost a fraction of the cost of bought cookies!

The reason I call these cookies “one two three” is because they are so quick to make! No piping, no cookie cutter, no leaving to chill – just one two three!

Ingredients

225g icing (confectioners) sugar

454g margarine (4 sticks)

680g flour

1tbsp vanilla extract

Juice of one lemon

Method

Heat oven to 180 degrees Celsius (360 Fahrenheit)

Using an electric mixer, cream margarine and sugar (If possible, cover the mixer with a tea towel as icing sugar leaves a cloud when first mixing).

Add the vanilla and lemon flavourings.

Gradually add the flour, working the mixture to a soft dough - you will sometimes need to add a bit more flour depending on how your mixture looks but it should end up a very soft dough.

Break off small pieces of the mixture and with your hands, roll them into walnut size balls.

Place cookies spaced apart on ungreased baking trays.

Press gently down on each cookies with the prongs of a fork, dipping the fork lightly in flour to prevent it sticking to the cookies.

Bake cookies for 15 minutes or until a very lightly golden colour.

Leave the cookies on the trays for 1-2 minutes before gently transferring to wire cooking racks to cool completely.

These cookies freeze really well - so you can save some for later!
