Cheesy Spinach Lasagna

Cheesy lasagna full of iron goodness

  • 1 box lasagna sheets
  • 2 tins chopped tomatoes
  • 1 onion
  • salt
  • pepper
  • mixed herbs
  • sunflower oil
  • 1 bag frozen spinach
  • 1.5 tubs of cottage cheese
  • 1 egg
  • 200g grated cheese (approx) 


In the frying pan pour enough oil to cover the bottom of the pan
Chop onion into fine pieces and saute until golden
Add both tins of chopped tomatoes
Add salt, pepper, mixed herbs (according to taste)
Let tomato sauce simmer until you are ready to assemble

In the meantime...

Defrost 10 balls of frozen spinach
Once defrosted mash with a fork and squeeze out any excess water
Add the cottage cheese and an egg (to bind the spinach and cottage cheese) and mix well

Now to assemble the layers:

Rinse the lasagna sheets for the bottom layer of the dish under cold water (this is so that it goes soft when it cooks, otherwise it stays hard)
Spoon half the tomato sauce onto the lasagna sheets
Then spoon half the spinach mixture on top
Add another layer of lasagna sheets 
Then add the rest of the spinach mixture as another layer
Followed by the rest of the tomato mixture as a final layer
Cover with grated cheese

Cook at 160 degrees for 40 minutes
