US-Israel Recipes: Quick Lemon Cake

An easy recipe just as the last citrus fruits are harvested in Israel, can be used to finish up the leftover Passover products.

6 eggs

2 and 1/4 cups of sugar

1 tsp. vanilla

1 cup oil

2 tsp. grated lemon zest

3 tbs. lemon juice

1 cup of grated coconut

1 and 1/2 cups flour (you can use up your potato or matza flour)

Beat the eggs (do not separate), add the ingredients one by one in order while mixing. Bake at 325F (160C) for half an hour and can even be baked successfully in the toaster oven.
