US-Israel Recipes: Passover Sweet Potato Casserole

2 cooked, peeled and mashed sweet potatoes (yams)

1 beaten egg

1/2 tsp. nutmeg

1 tbs. passover flour

dash of chives

1 crushed garlic clove

salt and pepper to taste

2 tbs. olive oil

Preheat oven to medium temperature and grease an ovenproof baking dish. Mix egg, spices and flour until blended. Add potato mash, chives and mix together. Pour into baking pan and bake 20-30 minutes until slightly browned. Serve hot.
