Israel-US Recipes: Passover Muffins
Arutz Sheva's Hebrew site is featuring a Passover recipe contest. The recipe below is one of the delicious entries. It is not "gebroks" (for those who keep this stringency), has no legumes (i.e. suitable for Ashkenazi and Sephardi kitchens) and is pareve to boot.
4 eggs, separated
3/4 c. sugar
1 c. chopped walnuts
1/4 c. ground coconut
4 tbs. potato starch
Beat the whites in the mixer bowl until stiff, adding sugar gradually while beating. In another bowl, beat yolks with a fork until fluffy. Mix nuts, coconuts and potato flour and add to yolks. Fold yolk mixture gently into whites. (Yolk mixture can be prepared before beating whites to be sure whites don't droop).
Fill 12 muffin baking pan 3/4 full and bake for 25 minutes at 180C (350F) until golden.
Let cool before serving. May be topped with confectionary sugar and used as a dessert.
